Chicken tortellini soup is everything you love about a classic chicken noodle soup recipe, but better. This is a 30-minute one pot soup recipe perfect for any night of the week.
Saute the veggies. Add the oil to a dutch oven or soup pot over medium heat and add the veggies and garlic. Cook for 3-4 minutes, until the onions are starting to get soft.
Add the broth and chicken. Add the broth and chicken to the pot and bring to a simmer for 15 minutes. This recipe uses rotisserie already cooked chicken, but you could use raw chicken breast or thighs. Just let it simmer with the veggies until cooked through, then shred and return to the pot.
Add the tortellini. Once the veggies are soft, add the tortellini to the pot and simmer for 5-7 minutes.
Finish. Stir in the lemon zest, juice, and dill and season with salt and pepper.
