Fresh watermelon juice is essential! Cube a small seedless watermelon and blend  until smooth. 

Strain the juice through a fine mesh strainer and store. 

Muddle fresh ginger, mint leaves and simple syrup in a glass. 

Add the rum, lime juice and watermelon juice and stir well. Add ice and top with soda water. 

Done!

Garnish with fresh mint, ginger, and watermelon and enjoy!
