This roast spatchcock turkey is easy to make and super juicy!

Step 1

Mix dry brine. Combine all the ingredients in a small bowl. Whisk until everything is well-mixed and set aside. The brine can be mixed days in advance.

Step 2

Spatchcock the turkey. Use kitchen shears to remove the backbone and break the breast bone. Full tutorial at link below. 

Step 3

Apply the brine. Liberally rub the brine all over the turkey. Pull the skin back and rub the brine under the skin. Refrigerate up to 72 hours. 

Step 4

Add butter.  Smear the turkey with room temperature butter until very well coated. 

Step 5

Roast.  Roast the turkey on a bed of chopped veggies and fresh herbs for 70-80 minutes, until cooked through.
