1. Season the Beef

Liberally season your beef chuck roast with kosher salt and freshly cracked pepper on both sides. Cut into large chunks.

2. Get a Good Sear

Add olive oil to a large dutch oven or braiser set over high heat. Sear the beef 2-3 minutes per side, until browned. 

3. Cook the Veggies

Remove beef from the pan, add a bit more oil, and add the onion, leek, and garlic. Cook until they're fragrant and soft.

4. Deglaze with Wine

Add two cups of bold red wine to the pan and bring to a simmer. Wines like Cabernet Sauvignon and Merlot work best. 

5. Time to Braise!

Add beef broth, return beef to the pan, throw in the carrots and fresh herbs and transfer to the oven, covered, for 3 hours.

Done!

Once the beef is tender, let it rest in the juices. Serve over creamy mashed potatoes with fresh chives!
