Step 1

Prep the beef.  Remove from the fridge and bring to room temp. Season liberally with salt and pepper and coat lightly in flour. 

Step 2

Mix the braising liquid.  Onion soup mix is the secret ingredient! Mix all the broth ingredients together and set aside. 

Step 3

Sear the beef.  Heat oil in a dutch oven until hot and then brown the meat 3-4 minutes per side until browned all over. 

Step 4

Assemble.  Arrange the veggies in the pot and nestle in the beef. Add the braising liquid and herbs.   

Step 5

Braise.  Cover the pot and transfer to the oven until the beef is fork tender, about 3 1/2 hours.
