Fry the tortillas.
Heat neutral oil in a nonstick skillet and fry the corn tortillas until crispy. Transfer to a plate lined with paper towels to drain.
Saute onions and peppers.
In the same skillet, saute the diced onion and jalapeños until soft
Add the eggs to the skillet and cook on low heat, dragging the eggs to the center so that large clumps form.
Fold in chips and cheese.
Once the eggs are just set but still soft, stir in the crispy corn chips, cheese, and cilantro.
Divide the eggs between warm flour tortillas and top with cilantro, cotija, and pico de gallo
