An easy, one-pan Mexican breakfast recipe!

Ingredients

Step 1

Fry the tortillas. Heat neutral oil in a nonstick skillet and fry the corn tortillas until crispy. Transfer to a plate lined with paper towels to drain.

Step 2

Saute onions and peppers. In the same skillet, saute the diced onion and jalapeños until soft

Step 3

Add eggs. Add the eggs to the skillet and cook on low heat, dragging the eggs to the center so that large clumps form. 

Step 4

Fold in chips and cheese.  Once the eggs are just set but still soft, stir in the crispy corn chips, cheese, and cilantro. 

Step 5

Serve.  Divide the eggs between warm flour tortillas and top with cilantro, cotija, and pico de gallo
