Step 1

Fry the tortillas. Heat neutral oil in a skillet and fry the tortillas until crispy. Transfer to a paper towel lined tray and season with salt. Remove all but 1 tablespoon of oil. 

Step 2

Saute veggies. Saute onion, poblano and jalapeños for 2-3 minutes until softened. 

Step 3

Add the tomatoes. Add the whole tomatoes and spices to the skillet and use a spoon to break them up.  

Step 4

Add the beans. Add the beans to the skillet, season with salt and pepper, and bring to a simmer. Simmer 10-15 minutes.  

Step 5

Cook the eggs. Make little wells in the tomato sauce and crack an egg in each. Simmer until the eggs are cooked to your taste.
