Grilled Greek Chicken Salad

An easy and healthy dinner-worthy salad recipe.

Step 1

Make the marinade. Whisk all the marinade ingredients together in a large mixing bowl.

Step 2

Marinate the chicken. Toss the chicken breast in the marinade and marinate for at least 30 minutes, up to 24 hours. 

Step 3

Grill the chicken. Use a grill pan or outdoor grill to grill the chicken to 165 F, about 5-6 minutes per side. 

Step 4

Make the dressing. Combine all the dressing ingredients in a mason jar and shake until emulsified. Store for up to 2 weeks. 

Step 5

Assemble. Divide greens and veggies in bowls and top with sliced grilled chicken, olives, feta, and pepperoncini. Drizzle dressing on top and serve.
