Greek Lemon Dill Rice

This easy recipe for one-pot greek lemon dill rice is the perfect easy side dish recipe. The rice is fluffy and bursting with fresh lemon and dill flavor.

Saute shallots in olive oil or butter until softened, about 3 minutes. 

Add the rice to the skillet and cook for 3-4 minutes, sitrrin often, until the rice is toasted. 

Add the broth, lemon zest, salt and pepper and bring to a simmer. Cover and cook for 15 min, until fluffy. 

Fluff the rice up and add the fresh dill and lemon juice. Season to taste with salt and pepper.
