Step 1

Dice the butter into very small cubes. Transfer to the freezer while you gather the rest of the ingredients. 

Step 2

Mix the butter into the dry ingredients, cheese, and chives until pea-sized pieces remain. 

Step 3

Mix in the buttermilk just until the dough clumps together. Don't over mix!

Step 4

Press the dough into a rectangle, then fold into thirds like a letter.

Step 5

Press back into a rectangle and repeat the folding 3 times. Cut into squares and chill 30 minutes. 

Step 6

Brush the tops of the biscuits with buttermilk and bake until golden brown and puffed.
