Step 1

Bake pita chips. Cut pita bread into triangles and toss with olive oil, salt, and za'atar. Bake until gold brown and crispy. 

Step 2

Prep eggplant. Cut the eggplant i half and using a sharp knife, score a diamond pattern into the flesh. This helps them cook evenly. 

Step 3

Char eggplant. Char the eggplant in a skillet or on the grill. Once they're soft, let them cool and then scoop the flesh out. 

Step 4

Blend. Combine the eggplant and remaining ingredients in a food processor and pulse until smooth. Season with salt and pepper. 

Step 5

Serve. Spread the eggplant dip in a serving bowl and top with olive oil and more za'atar. Serve with warm pita chips.
