1. Caramelize Onions
Melt butter in a large skillet and add the thinly sliced onions. Cook, stirring occasionally, until deeply golden brown.

2. Prep Potatoes
Peel the potatoes and use a mandoline to slice them 1/8" thick. Simmer the potatoes, cream, h&h, garlic, and thyme in a pot until tender.

3. Layer the Potatoes
Butter a 3 qt. baking dish and using a slotted spoon, layer the potatoes, onion, and gruyere. Top with the remaining cream.

4. Top with Cheese
Top the gratin with more gruyere cheese and bake at 375 F for 40 minutes, until the cheese is bubbly and potaotes are tender.
