Step 1

Season the chicken liberally all over (inside and out) with salt and pepper at least 6-8 hours before cooking. 

Step 2

Mix the olive oil and spices for the rub until smooth and paste-like.

Step 3

Massage the rub into the chicken, getting in all the nooks and crannies. Refrigerate for 2 hours. 

Step 4

Pour half the beer in skillet and ease the chicken onto the beer so it's stable and upright. 

Step 5

Grill (or bake!) basting with juices and melted butter every 15 min until cooked through.
