Bacon and Leek Frittata

Frittatas are one of my favorite easy brunch recipes and this bacon and leek frittata recipe is a new breakfast staple.

- Bacon - Leek - Eggs - Half and Half - Boursin or Goat Cheese - Chives - Salt and Pepper

Add bacon to a skillet over medium-low heat and cook until crispy and rendered.  

While the bacon cooks, whisk the eggs, half and half, salt and pepper until smooth. 

Remove the bacon and saute the leeks in the bacon fat. 

Pour the eggs into the skillet over the leeks and stir to evenly distribute the leeks. 

Top with crispy bacon and boursin or goat cheese and bake until puffed in the center and fluffy. 

Done!

Top with fresh minced chives and serve warm.
