Apple Cider Braised Pork Roast

Step 1

Season and sear pork. Season the pork all over with salt and pepper. Sear in a hot dutch oven in neutral oil until browned on all sides.  

Step 2

Add the braising liquid. Whisk together the braising liquid ingredients and pour them over the pork,. Add the garlic and herbs. 

Step 3

Braise. Braise low and slow for a couple of hours. Just shy of fork tender, add the apples and onions and return to the oven.

Step 4

Cook til tender.  Cook until the pork is fall apart tender and the apples and onions are soft. Rest in the juice 30 min before serving.

Step 5

Serve.  Divide the pork, apples, onions, and jus among bowls. Serve with creamy mashed potatoes or spaetzle.
