Caramelized Onion Dip

There's nothing more nostalgic than caramelized onion dip with potato chips and this recipe blows the boxed stuff out of the water!

Cook Time: 35 minutes
Makes: 2 cups

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon salted butter
  • 2 large yellow onions thinly sliced
  • 2 large shallots thinly sliced
  • 1 tablespoon soy sauce
  • 1 1/2 cups sour cream
  • 2 tablespoons minced dehydrated onion
  • 1/4 cup mayonnaise
  • 2 teaspoons minced dehydrated garlic
  • 1 teaspoon umami seasoning optional
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon dijon mustard
  • 3 tablespoons minced fresh chives
  • salt and freshly ground pepper to taste

Instructions

  • Add butter and olive oil to a skillet over medium-low heat. Add the onion and shallot and season with a little salt and pepper and cook, stirring occasionally. Once the onions are soft and translucent, add the soy sauce. Cook, stirring occasionally, until the onions are deeply golden brown (about 30 minutes). Allow the onions to cool to room temperature.
  • Roughly chop the onions and then mix with the remaining ingredients in a mixing bowl. Season to taste with salt and pepper. Refrigerate until ready to serve. Best made 24 hours before serving.
