1. Fry Sage Leaves
Melt butter and olive oil in a large skillet or braiser and gently fry fresh sage leaves until dark green and crispy. This adds huge flavor to the finished sauce!

2. Cook Pancetta
Remove the sage leaves and add diced pancetta. Cook until crispy and use a slotted spoon to transfer them to a plate.

3. Brown the Meat
Add the ground veal and sausage and cook, breaking up with a spoon, until browned. Transfer to the plate with the pancetta using a slotted spoon.

4. Add the Veggies
Add the onion, carrots, celery, garlic and fennel and cook until soft. Add the white wine to deglaze the pan.

5. Simmer Time!
Return the meat to the pan and add the chicken broth, cream, parmesan rind, and bay leaves. Simmer for 2 hours until very tender.
