Step 1

Make the marinade. Blend the marinade ingredients until smooth. Using a high-powered blender is a must here. 

Step 2

Marinate chicken. Pour the marinade over the chicken in a ziplock bag and marinate for at least 1 hour, up to 48 hours. 

Step 3

Grill chicken. Grill the chicken for 4-5 minutes per side, until charred and cooked through. 

Step 4

Make dressing.  Whisk together all the dressing ingredients until smooth. Season to taste with fish sauce. 

Step 5

Assemble. Divide noodles among bowls, top with grilled chicken, veggies, herbs, and dressing. Serve with lime wedges.
