Turkey Shepherd's Pie

An easy one-pan light dinner recipe!

Step 1

Brown mushrooms.  Heat oil in an oven safe skillet and add quartered mushrooms. Cook until very browned.

Step 2

Saute veggies. Once mushrooms are browned, add butter and saute veggies until soft. 

Step 3

Brown turkey. Add the ground turkey to the skillet and cook until browned, breaking the meat up as it cooks.

Step 4

Build sauce.  Sprinkle in flour and seasonings and add beef broth. Simmer til thick, then stir in peas, salt and pepper. 

Step 5

Top and bake. Top with mashed potatoes, chives, and parmesan and bake until hot and bubbly.
