Cut wonton wrappers in half and fry until golden brown. Click link for frying and baking instructions.
Mix avocado layer.
Dice and lightly mash an avocado. Mix in mayo, wasabi, lime, salt and pepper.
Dice and mix tuna.
Dice tuna into small pieces and mix with soy and other ingredients until well-combined.
Use a ring mold and press the avocado in the bottom. Add the tuna and press to pack in. Top with sliced cucumber.
Drizzle with ponzu sauce, top with sesame seeds, and serve with wonton chips.
