Step 1

Crisp the pancetta.  Melt butter and olive oil in a dutch oven over low heat and add the pancetta. Cook til crispy and remove from the pot. 

Step 2

Chop the veggies.  While the pancetta cooks, add the soffritto veggies to a food processor and pulse until finely chopped.    

Step 3

Cook the meat.  Add the meat to the dutch oven over low heat and cook, stirring constantly until cooked through and fine. 

Step 4

Add the veggies.  Once the meat is cooked, add the veggies and tomato paste and cook for 5-6 minutes. 

Step 5

Simmer.  Add the remaining ingredients and the pancetta to the pot and simmer on low for 2-3 hours. 

Step 6

Cook with pasta.  Add some sauce to a skillet with al dente pasta and pasta water. Cook 2-3 minutes.
