Step 1

Roast the beef ribs/bones on a baking sheet lined with foil until browned on both sides. 

Step 2

Add the roasted ribs and veggies and aromatics to a stock pot and cover with water. Reduce by half and strain.

Step 3

Use a mandoline to thinly and evenly slice all the onions. 

Step 4

Cook the onions, garlic, and bay leaves in butter until deeply caramelized. 

Step 5

Add the homemade beef stock, vermouth, and remaining ingredients and simmer for 20 min. 

Step 6

Ladle the soup into bowls and top with toasted bread and gruyere cheese. 

Step 7

Bake and broil the soup until the cheese is melted and bubbly. Serve warm.
