Step 1

Spatchcock your chicken. This helps the bird cook evenly (no dry meat!). Full tutorial at link below. Season the chicken all over and let it rest in the fridge. 

Step 2

Sear the chicken. Heat oil in a large skillet and place the chicken skin side-down in the pan once the oil is hot.  

Step 3

Weigh it down.  Lay another skillet or heavy pot over the top to weigh the chicken down. This will give you extra crispy browned skin. 

Step 4

Roast. Flip the chicken over in the skillet and arrange lemon slices around and under it. Roast until cooked through. 

Step 5

Make the pan sauce. Use the same skillet to make the pan sauce using the chicken drippings. So full of flavor!
