Thai Basil Chicken (Pad Krapow Gai)

Step 1

Make the sauce. Whisk together the sauce ingredients until the sugar dissolves and set aside. 

Step 2

Saute the aromatics. Heat oil in a wok until shimmering and saute the shallots, garlic, and Thai chilies for 1-2 minutes. 

Step 3

Cook the chicken. Add the chicken to the wok and cook, stirring often, until it starts to brown. 

Step 4

Add the mushrooms.  Add the mushrooms and scallions and cook for another 3-4 minutes until the mushrooms soften.

Step 5

Add sauce and veggies.  Add the sauce and veggies and cook until the sauce is starting to reduce and caramelize. 

Step 6

Finish.  Fold in the scallion tops and Thai basil and cook until the basil is wilted and fragrant.
