Step 1

Make red wine onions.  Cook onions and thyme in butter until soft and add red wine and cook til caramelized. 

Step 2

Mix burger sauce. In a small bowl, mix the mayonnaise, whole grain mustard, and pepper. 

Step 3

Mix burgers. Gently mix ground beef with coarse pepper, kosher salt and Worcestershire sauce taking care to mix as little as possible. 

Step 4

Shape burgers.  Divide beef into 8 oz portions and press into a 4" burger patty. Make an indentation in the middle. 

Step 5

Grill and assemble. Grill the burger patties to medium and assemble burgers with all toppings.
