Make red wine onions.
Cook onions and thyme in butter until soft and add red wine and cook til caramelized.
Mix burger sauce.
In a small bowl, mix the mayonnaise, whole grain mustard, and pepper.
Gently mix ground beef with coarse pepper, kosher salt and Worcestershire sauce taking care to mix as little as possible.
Divide beef into 8 oz portions and press into a 4" burger patty. Make an indentation in the middle.
Grill and assemble.
Grill the burger patties to medium and assemble burgers with all toppings.
