Step 1

Dice the beef.  Dice the beef into 1/4" dice and keep cold. Follow tips at link below for handling raw beef safely. 

Step 2

Mix the sauce.  Whisk the egg yolk, dijon, lemon juice, and red wine vinegar and then whisk in the olive oil until smooth and thick. 

Step 3

Chop the ingredients. Finely mince all the ingredients and combine with the beef. 

Step 4

Mix.  Mix in the sauce and gently mix all the ingredients. Season to taste with salt and pepper. Chill until ready to serve. 

Step 5

Serve.  Use a ring mold to press into a disc and top with fried onion, lemon zest and herbs. Serve with toasted bread.
