Steak au Poivre

A simple and delicious, yet impressive steak recipe!

Ingredients

Step 1

Crush peppercorns.  Use a mortar and pestle to crush the peppercorns until coarse in texture. Set 2 teaspoons aside.

Step 2

Season steak. Pat tenderloin dry and season with salt and lots of crushed pepper. Rest at room temperature 30 minutes before cooking. 

Step 3

Sear steak.  Sear steak all over in a hot pan, baste with garlic, butter and herbs. Transfer to the oven to finish cooking. 

Step 4

Make sauce.  Remove steak and let it rest. Add shallots to the pan, cognac, cream, and peppercorns. 

Step 5

Serve.  Slice steak and serve with pan sauce. Serve alongside fries and salad for a complete meal.
