Step 1

Mix the marinade ingredients together and add the chicken. Marinate for at least 2 hours. 

Step 2

Combine the peanut sauce ingredients in a small saucepan and whisk well. Simmer 5 minutes. 

Step 3

Cook the chicken in a skillet or on the grill for 3-4 minutes per side, until cooked through. 

Step 4

Compile all the ingredients for the bowls, including veggies and herbs. Cook the rice noodles. 

Step 5

Divide noodles into bowls and top with chicken, veggies, herbs, and peanut sauce.
