Roast or char the poblanos, then let them cool in a ziplock bag. Peel and finely dice them.
Mix the burger ingredients with the ground turkey by hand until well-mixed, but not over-mixed.
Divide the mixture into 4 and form into patties with a depression in the middle. Firm up in the freezer briefly.
Cook the burgers on a grill pan or in a cast iron skillet and then flip and top with pepper-jack cheese.
Toast the buns and build the burger with all your favorite toppings and condiments.
