Step 1

Make the sauce. Combine all the sauce ingredients in a sauce pan and bring to a gentle simmer. Whisk until smooth and the sugar is dissolved. 

Step 2

Cook your noodles. Fresh wheat noodles are best here! Cook according to package instructions and rinse really well with cold water. 

Step 3

Chop your veggies. Feel free to mix it up here! This recipe is super flexible in terms of additions. Use what you have! 

Step 4

Assemble. Divide your noodles into bowls, mix with your veggies, and top with the peanut sauce. Add toppings as desired.
