Roasted Garlic Mashed Potatoes

Step 1

Roast the garlic. Cut the tops off the garlic heads, drizzle with oil and salt, wrap in foil, and roast until golden brown and soft. 

Step 2

Boil the potatoes. Peel and cut the potatoes into 2" chunks and boil in salted water until tender and able to be pierced with a fork.

Step 3

Add the cream. Melt butter in a small saucepan and once it's almost browned, add the sage leaves. Set aside. 

Step 4

Drain Potatoes.  Drain the potatoes and return them to the same pot. Add the roasted garlic, sour cream, and sage butter.  

Step 5

Mash.  Whip or mash the potatoes using whatever method you prefer. Add warmed half and half and season with salt and pepper.
