Mix filling ingredients together in a large bowl until well combined. 

Lightly fry tortillas for 10-15 seconds per side so they are warm and flexible. 

Dip the cooled tortillas in enchilada sauce on both sides, letting any excess drip off. 

Fill the tortillas and roll into tight logs. Lay them seam side down in the baking dish. 

Top with more enchilada sauce and cheese. Bake uncovered until hot and bubbly and golden brown. 

Done!

Top with thinly sliced onion, green onion, and cilantro before serving.
