Step 1

Simmer the dried chilies in a small saucepan with the water. Let them sit in the water for 10 minutes. 

Step 2

Blend the dried chilies, liquid, garlic, spices, vinegar, and salt until smooth. 

Step 3

Sear the pork well, then add the onions, bay leaves, and red chile sauce. Braise for 3 hours. 

Step 4

Pull the pork out of the broth and shred it off the bone into bite-sized pieces. 

Step 5

Add the shredded pork back to the pot with the hominy and broth and simmer for 45 min.
