Step 1

Combine the brown sugar and fish sauce in a dutch oven and cook until the sugar is melted and bubbling. 

Step 2

Add the pork, shallots, ginger, garlic, soy, and some water and bring to a simmer. 

Step 3

Simmer until the pork is tender and the liquid has evaporated and the sauce glazes the pork pieces. 

Step 4

Serve the pork with steamed rice, lettuce, crunchy veggies, and fresh herbs.
