Step 1

Start by browning the pancetta and cooking it until it's crispy. Use a slotted spoon and transfer it to a bowl. 

Step 2

Add the shallots and garlic and saute until soft. Stir in the tomato paste and red wine and bring to a simmer. 

Step 3

Stir in the crushed tomatoes, basil, and pancetta and season with salt and pepper. Simmer for 15 minutes. 

Step 4

Stir the heavy cream into the sauce and stir well until it's completely combined. Stir in the pasta water. 

Step 5

Stir the cooked pasta into the sauce and simmer for 4-5 minutes until the sauce clings to the pasta.
