Boil the potatoes.
Peel and cut the potatoes into 2" chunks and boil in salted water until tender and able to be pierced with a fork.
Drain the potatoes and return them to the hot pot they were boiled in.
Add the sour cream and dijon to the pot with salt and pepper and lightly mash the potatoes.
Whip or mash the potatoes using whatever method you prefer. Add warmed cream, butter and garlic and season with salt and pepper.
