Sear the shrimp.
Heat olive oil in a large skillet and sear the shrimp for 2-3 minutes per side until golden brown. Start your pasta by bringing a salted pot of water to a boil. Cook pasta al dente.
Make the sauce.
Saute the shallots in butter and add white wine. Reduce and add the heavy cream, lemon zest, pasta water, salt and pepper.
Add the pasta.
Using tongs, transfer the al dente pasta to the sauce, add mascarpone and butter and fresh lemon juice.
Add the shrimp.
Let the pasta simmer in the sauce, then return the shrimp to the pasta to warm through.
Toss everything together and top with fresh parsley. Season to taste with salt and pepper.
