Pasta al Limone with Shrimp

Ingredients

Step 1

Sear the shrimp. Heat olive oil in a large skillet and sear the shrimp for 2-3 minutes per side until golden brown. Start your pasta by bringing a salted pot of water to a boil. Cook pasta al dente. 

Step 2

Make the sauce. Saute the shallots  in butter and add white wine. Reduce and add the heavy cream, lemon zest, pasta water, salt and pepper. 

Step 3

Add the pasta. Using tongs, transfer the al dente pasta to the sauce, add mascarpone and butter and fresh lemon juice. 

Step 4

Add the shrimp. Let the pasta simmer in the sauce, then return the shrimp to the pasta to warm through. 

Step 5

Finish. Toss everything together and top with fresh parsley. Season to taste with salt and pepper.
