Step 1

Thinly slice the leeks, wash them in a bowl of cold water, and then drain on paper towels and pat dry.

Step 2

Cook the leeks in melted butter, until very soft. Add the garlic and spices and season with salt and pepper. 

Step 3

Add the potatoes and broth and simmer until the potatoes are tender. Add the cream. 

Step 4

Using a blender or immersion blender, blend the soup until very smooth. 

Step 5

Ladle the soup into bowls and drizzle with cream. Top with thinly sliced green onions.
