Step 1

Brown the meat.  Heat olive oil in a large skillet over medium heat and add the ground beef. Cook, breaking up as you go along, until browned. 

Step 2

Add the veggies. Add the onion, garlic, poblano, carrot, and garlic and cook until the veggies have softened a bit. 

Step 3

Add remaining ingredients. Add the tomato products, broth, potatoes, and seasonings, cover, and simmer 20 minutes.

Step 4

Simmer.  After the potatoes are tender, add the peas and corn and simmer 10 more minutes. 

Step 5

Serve.  Serve with warm tortillas, shredded lettuce, limes, rice, and salsa.
