Make the bolognese.
Follow the recipe instructions to make the bolognese sauce. It can be prepped several days in advance.
Make the bechamel.
Melt butter in a saucepan and add flour. Cook for 2-3 min, then whisk in milk. Add parm, salt and pepper.
Boil the noodles.
Boil the noodles to al dente in salted boiling water. Place on a baking sheet drizzled with oil.
Start with a thin layer of bechamel and noodles. Add bolognese sauce, more bechamel, parm, and mozzarella. Repeat.
Repeat layers until the top. Top with bechamel, parmesan and mozzarella.
Bake covered for 1 hour. Uncover and bake until top is browned and bubbly.
