Step 1

Combine all the meatball ingredients and mix by hand until combined. Use a small cookie scoop to portion out the meatballs. 

Step 2

Lay the meatball out on a baking sheet and broil them in the oven until they're browned.

Step 3

Add the pancetta to a dutch oven over low heat and cook, stirring occasionally, until crispy. 

Step 4

Saute the veggies in the fat, then pour in the chicken broth and bring to a simmer.

Step 5

Add in the meatballs and simmer for 10 minutes. Then, add the pasta and simmer until tender.

Step 6

Stir in the kale, lemon zest, and lemon juice. Cook for     2-3 minutes, until the kale is wilted.
