Step 1
Sear the steak.
Heat oil in a cast iron or stainless steel skillet and sear the steak until deeply browned. Transfer to a plate and refrigerate for 30 min.

Mushroom duxelles.
Melt butter in the same skillet and cook mushrooms, shallot, garlic, thyme and cognac down until mushrooms are dry.

Prep prosciutto.
Lay out slices of prosciutto and top with the mushroom duxelles. It helps to do this on plastic wrap.

Wrap.
Place the steak in the center, brush with dijon, and wrap the prosciutto around it.
