Filet Mignon Mushrooms Shallots Garlic Prosciutto Puff Pastry Cognac Butter Dijon Mustard Thyme Salt & Pepper

Ingredients

Step 1

Sear the steak. Heat oil in a cast iron or stainless steel skillet and sear the steak until deeply browned. Transfer to a plate and refrigerate for 30 min. 

Step 2

Mushroom duxelles. Melt butter in the same skillet and cook mushrooms, shallot, garlic, thyme and cognac down until mushrooms are dry. 

Step 3

Prep prosciutto. Lay out slices of prosciutto and top with the mushroom duxelles. It helps to do this on plastic wrap. 

Step 4

Wrap.  Place the steak in the center, brush with dijon, and wrap the prosciutto around it.

Step 5

Wrap in puff pastry.  Wrap the steak in puff pastry and press the edges together to fully enclose. 

Step 6

Top and bake.  Brush with egg wash and top with flaky salt. Bake until golden brown.
