Brown the ham.
Heat oil and sesame oil in a large wok over medium-high heat. Once hot, add the ham and cook until browned.
Add the veggies.
Add the diced onion, carrot, and the white/light green parts of the. green onion. Cook until soft.
Cook the rice and eggs.
Add the rice and cook. Then, scoot the rice over and cook the eggs. Incorporate the egg back in.
Finish the fried rice.
Add the soy sauce and oyster sauce and cook for 2-3 min. Season to taste and add the green onion tops.
