Step 1

Render bacon.  Add chopped bacon to a dutch oven over low heat and cook until crispy. Remove bacon from the pot.

Step 2

Sear the beef.  Season the beef all over with salt and pepper and brown in the leftover bacon fat. Remove from the pot.

Step 3

Saute veggies. Saute veggies and garlic in leftover bacon fat and then add the tomato paste and flour.

Step 4

Braise.  Add the liquid ingredients, beef, bacon, and potatoes and transfer to the oven. Cook until the beef is very tender.  

Step 5

Serve. Stir in the peas and serve over mashed potatoes, rice, or buttered noodles with chopped parsley.
