Step 1

Char poblanos.  Use a gas burner or broiler. Once blackened, steam in a ziplock or covered bowl. Then, peel and chop.

Step 2

Make the sauce. Combine the poblanos and the rest of the ingredients and blend until smooth.  

Step 3

Make the filling.  Heat oil in a skillet and cook the ground beef. Add potatoes, corn, and seasonings and cook until soft.  

Step 4

Assemble.  Place filling and cheese in a tortilla and roll it up. Place it seam side down in a baking dish.  

Step 5

Bake.  Top with the remaining sauce and more cheese and bake until hot and bubbly. 

Step 6

Top and serve.  Remove from the oven and top with sliced jalapeño, salsa, and cilantro
