Step 1

Finely chop the chipotle and cilantro. Whisk together the rest of the marinade ingredients until well-mixed. 

Step 2

Coat the fish in the marinade really well and marinate for 30 minutes. 

Step 3

Preheat the grill and lightly grease the grates. Grill the fish for 4-5 minutes per side, until firm and flaky. 

Step 4

After the fish is finished grilling, warm the corn tortillas on the grill. 

Step 5

Flake the fish and assemble on the tortillas with cabbage, pico, white sauce, and cotija.
