Step 1

Whisk together the ingredients for the chimichurri. Set aside half of it for later. 

Step 2

Toss the uncooked shrimp with half of the chimichurri sauce and marinate for at least 1 hour. 

Step 3

Combine all the ingredients for the whipped feta in a food processor and stream in the oil while blending. 

Step 4

Thread the shrimp onto wooden skewers in groups of 3-4. Preheat an outdoor grill to 450 F. 

Step 5

Grill the shrimp for 3-4 minutes per side, until pink and slightly firm to the touch.
