Step 1

Roast the veggies. Toss the tomatillos, onion and jalapeño with oil, salt, and pepper and roast until blistered. 

Step 2

Blend the sauce. Combine the roasted veggies in a blender with cilantro and lime and blend until smooth. 

Step 3

Fry the tortillas. Heat a thin layer of oil in a skillet and fry the tortillas in batches until crispy. 

Step 4

Cook the salsa. Remove all but 1 tablespoon of oil and add the salsa verde. Simmer for 3-4 min.

Step 5

Add crispy tortillas.  Toss the crispy tortillas in the sauce and cook for 1-2 minutes. The chips should not be soggy. 

Step 6

Top and serve.  Divide the chilaquiles among bowls and top as desired. Serve immediately.
