Fried coconut shrimp is one of my favorite appetizer recipes! Tender shrimp in a crispy panko-coconut coating with a sweet and spicy cocktail sauce. Perfect for summer!

Pat your shrimp very dry with paper towels--this helps the coating stick. 

Whisk together the batter and pour it over the shrimp. Let them sit for 30 minutes. 

Toss the shrimp in the coconut and panko and lay them on a tray. 

Fry the shrimp in hot canola oil until golden brown. Let them drain on a paper towel. 

Done!

Serve with limes and the sweet and spicy cocktail sauce along with some fresh herbs and sweet chili sauce.
