Step 1

Toss the veggies with oil and seasonings and grill until softened and lightly charred. 

Step 2

Combine all the dressing ingredients and whisk until smooth. Set aside. 

Step 3

Cook the couscous according to package instructions. Drain and rinse with cool water.  

Step 4

Toss the pasta with the veggies, dressing, and feta until well combined. Season with salt and pepper. 

Step 5

Chill or serve warm. Top with more feta right before serving.
